Pumpkin Pie Fudge (gf,v,df)
Pumpkin pie in healthy fudge form?! YES PLEASE
Did you know that pumpkins are chock full of vitamins + minerals (particularly vitamins A + C, potassium, magnesium + iron) as well as antioxidants +fiber?! So as if we needed another reason to enjoy pumpkin EVERYTHING, now we can relish in our Fall delight knowing that it’s serving our plaid + bootie wearing bodies well!
This pumpkin pie fudge will give you all the warm + cozy fall feels and is made with simple, nutritious ingredients like pumpkin, coconut oil and nut butter. Y U M M O !
PUMPKIN PIE FUDGE
- 1/4 cup melted coconut oil
- 1/3 cup peanut butter (or any nut butter–I bet walnut butter would be DELISH)
- 1/3 cup pumpkin puree
- 3 tbsp maple syrup
- 1/4 tsp each pumpkin pie spice, nutmeg, cinnamon
Combine all ingredients + whisk together until smooth. Pour batter into either an ice tray to make pre portioned cubes or a small baking dish and place in the freezer. Try and wait at least a few hours for it to firm up before you devour! Pro tip: don’t forget to eat the batter…you won’t be disappointed 🙂
