Peanut Butter Coconut Protein Balls


You guys know I loveeee me a good energy ball!
Running after Emory all day is no joke and now that she’s primarily eating solids, I feel like a short-hand cook all day every day. Between cooking + cleaning for her I find I have no motivation or time to actually make meals for me most days. So on top of eating her leftovers 🙂 , these PB Coconut balls are a staple for me! They’re quick, easy, delicious + satisfying…just what this busy mama needs! Give them a try + let me know what ya think!
1/2 cup peanut butter
1/2 cup coconut flour
1/2 cup rolled oats
2 scoops vanilla protein powder
1 tsp vanilla extract
3tbsp honey
3-4 tbsp coconut flakes + more for coating if ya wanna make them look FANCAAYYY!
3-4tbsp water
Blend all ingredients in your food processor or blender, roll them into balls, refrigerate + ENJOY!
