Chocolate Caramel Pecan Squares

HOLY MOLYYYYYYY these are what indulgent chocolate dreams are made of! Made with simple, whole ingredients, these will delight your sweet tooth while also giving you healthy fat, protein and antioxidants! Whip these up and let me know what you think of them!


Chocolate layer:

  • 1/4 cup melted coconut oil
  • 1/2 cup cocoa powder
  • 1/2 cup almond butter
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup
  • 3 tbsp chopped pecans

Caramel sauce:

  • 5 Tbsp coconut sugar
  • 3 Tbsp full fat coconut milk
  • pink sea salt


  1. Add coconut sugar and coconut milk to a saucepan over low heat. Stir until the coconut cream has melted.
  2. Turn the heat to high and continue stirring briskly until it comes to a boil. Stir as the mixture bubbles for about 1 minute then reduce the heat back to low. Continue stirring over low heat for another 3-5 minutes.
  3. Pour caramel into a small cup and place in the fridge to cool/thicken
  4. While the caramel is doing its thing, combine all ingredients for the chocolate layer in a bowl and stir to combine.
  5. Pour chocolate layer into a 8.5 X 4.5 loaf pan lined with parchment paper
  6. Drizzle chilled caramel sauce on top of chocolate layer then sprinkle with pink sea salt
  7. Place in the freezer for at least 1 hour then cut into squares and ENJOY!!!
  8. Store in fridge for up to 2 weeks but we all know they won’t last that long 🙂

30 Day SWEAT + RESET Challenge!

As much as I LOVE winecations + tuning out for a few days, I equally love getting back into my routine + treating my body + mind like the QUEEN she is.

For me, that means eating whole, nutritious foods that fuel my body + mind  and make me feel energized + jazzed about life. Did you know the gut is directly linked to your brain and they legit talk back and forth to each other? And that 90% of our serotonin receptors (happy hormone) live in our gut?! The food you consume can directly affect your mood, anxiety, libido (!!) and even your risk of developing neurodegenerative diseases.

It also means moving my body consistently every day; whether it be a barre, HIIT or cycle workout or simply going on walks. The key is movement and the benefits are insurmountable and they’re much more vast than you may think. From increased brain health (exercise actually stimulates chemical changes in your brain that enhance learning, mood and thinking) to building + preserving bone mass (did you know your bone mass starts to decline in your 30’s?!) to increased immunity (fun fact: the lymphatic system relies on your motion to circulate fluids and flush out toxins, wastes + other unwanted materials from your body)

These reasons are obviously just the tip of the iceberg as to why it is SO important to treat your body like your most precious possession (ugh because it is) but unfortunately a lot of us, myself included, don’t always do that or even know what foods and movement actually ARE the best for YOU.
